Following an energetic beginning, Benjamin Nygren granted Celtic the advantage in the ninth minute.
Dundee equalized in the 57th minute, with Simon Murray successfully converting a penalty.
Iheanacho came on for Tomás Cvancara shortly after the game was level.
The Nigerian international received a pass from Marcelo Saracchi in the 82nd minute, before slotting in the winner.
Celtic narrowed the deficit on league frontrunners Hearts to three points with six fixtures left.
