It was Bayern who first found the net at the Parc des Princes, with Harry Kane successfully converting from the penalty mark.
Khvicha Kvaratskhelia equalized to make it 1-1, before Joao Neves propelled PSG ahead with a header.
Michael Olise believed he had restored parity before halftime, but the home team was awarded a penalty, and Ousmane Dembele confidently converted from the spot.
After the interval, PSG added two more through Kvaratskhelia and Dembele, before Bayern retaliated with goals from Dayot Upamecano and Luis Diaz.
The second leg is scheduled to take place at the Allianz Arena next Wednesday.
